This cornbread is the classic buttermilk cornbread you'll find throughout the South. Cut the cornbread into wedges and serve hot with soups, stew, chili, beans, or greens. Many people like to crumble their cornbread in a glass and fill it with cold milk. A pan of cornbread also makes a great dressing to go with chicken, pork, or turkey.
Southern cornbread traditionally used white cornmeal and buttermilk. Other ingredients such as pork rinds are sometimes used. Cornbread is occasionally crumbled and served with cold milk or clabber (buttermilk), similar to cold cereal. In Texas, Mexican influence has spawned a hearty cornbread made with fresh or creamed corn kernels and jalapeño peppers and topped with shredded cheese. Beans and Cornbread" was also the traditional meal served to NASA launch crews following a successful space shuttle launch. The tradition was begun on April 12, 1981, by NASA test director Norm Carlson and was continued after every successful launch. Cornbread is a jazz album by trumpeter Lee Morgan, released on the Blue Note label in 1967. It features performances by Morgan, Herbie Hancock, Billy Higgins, Jackie McLean, Hank Mobley and Larry Ridley.
