Modified starch, also called starch derivatives, are prepared by physically, enzymatically, or chemically treating native starch to change its properties. Modified starches are used in practically all starch applications, such as in food products as a thickening agent, stabilizer or emulsifier; in pharmaceuticals as a disintegrant; or as binder in coated paper. They are also used in many other applications.

Genetically modified crops (GM crops) are plants used in agriculture, the DNA of which has been modified using genetic engineering methods. In most cases, the aim is to introduce a new trait to the plant which does not occur naturally in the species. Examples in food crops include resistance to certain pests, diseases, environmental conditions, reduction of spoilage, resistance to chemical treatments (. resistance to a herbicide), or improving the nutrient profile of the crop.

As of 2015, 26 plant species have been genetically modified and approved for commercial release in at least one country. The majority of these species contain genes that make them either tolerant to herbicides or resistant to insects. Other common traits include virus resistance, delayed ripening, modified flower colour or altered composition
