Paul’s Boutique takes a more experimental approach with its production, relying on multi-layered, obscure sampling. The album’s use of multi-layered sampling helped establish sampling as an art form. Contrary to popular belief, most of the samples were cleared, but at a much lower cost than that of current rates. The album was produced by Los Angeles duo Dust Brothers, in conjunction with Mario Caldato J. and the Beastie Boys themselves. The album was originally meant to be released as a Dust Brothers instrumental album, but the Beastie Boys persuaded the duo to let them record vocals over the tracks. Despite the departure from the sound of the previous record, the Beastie Boys maintain their silly, care-free, energetic style that made them so endearing in the first place.

Featuring production by the Dust Brothers, the recording sessions for the album took place at Mario G's Studio in Los Angeles and The Opium Den in Brooklyn, New York from 1988 to 1989, after which the recordings underwent mixing at the Manhattan-based Record Plant Studios.
Paul's Boutique is a record that only could have been made in a specific time and place. Like the Rolling Stones in 1972, the Beastie Boys were in exile and pining for their home, so they made a love letter to downtown New York - which they could not have done without the Dust Brothers, a Los Angeles-based production duo who helped redefine what sampling could be with this record
